Little Snacktivists - Banana Chia Bread (So Easy 2-Yr Olds Can Make It!)
This recipe for Banana Chia Bread is super delish and simple to make. I have adapted the recipe over the years from a basic banana bread to a healthier version. It's kind of like my hair color, I am not quite sure of the original version, but am happy with the new results!
NOTE: We used eggs in this version SO IT IS NOT VEGAN. Vegan version we recommend removing eggs from recipe (the applesauce, bananas and chia seeds will do the trick)!

Banana Chia Bread
Yield 16 servings (serving size: 1 slice)
Ingredients
- 3/4 cup Chia seeds
- 2/3 cup mashed ripe banana (3-4 very ripe bananas)
- 1/2 cup sugar date paste
- 1 cup natural/organic applesauce
- 2 large eggs 1 1/2 cups whole wheat flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup Enjoy Life Dark Chocolate Morsels (Blueberries work great, too!)
- Cooking spray
Preparation
Preheat oven to 350°. Beat the banana, dates, applesauce, and eggs in blender until well-blended. Lightly spoon flour into dry measuring cups, and level with a knife. Combine flour, chia, baking powder, baking soda, and salt, and gradually add to banana mixture, beating until well-blended. Stir in chocolate chips. Spoon the batter into an 8 x 4-inch loaf pan or muffin pan for 12, coated with cooking spray. Bake bread at 350° for 55 minutes or until a wooden pick inserted in center comes out clean. Cool 10 minutes in pan on a wire rack, and remove from pan. Cool completely on wire rack.
